Variable speed control!! Means you only turn it at full speed when you have grease. You keep it at low speed when you cook light.

it's made by liquid tight, continuous welding technique in all seams and joint areas. It's not sealed by silicon. It bears NSF label which is verifiable on NSF websites. It has met the standards set by the National Sanitation Foundation (NSF), which tests public safety, health, and environment.
